BARLEY SALAD WITH SAUTEED ZUCCHINI & BABY ROSA TOMATOES

Ingredients

  • 2 C chicken stock (homemade or store bought)
  • 250 g barley, uncooked
  • 2 Tbsp olive oil, plus 2 Tbsp for serving
  • 175 g zucchini, sliced into thin ribbons using a mandoline or vegetable peeler
  • 2 garlic cloves, finely chopped
  • 200 g baby Rosa tomatoes
  • 2 Tbsp Italian flat leaf parsley, roughly chopped
  • 1 lemon, juice and zest
  • Sea salt and freshly ground black pepper

Instructions

  • 1. Heat the chicken stock in a 20cm saucepan. Add the barley and gently simmer for about 25 minutes with lid on until cooked. Add a little water or extra stock if the barley starts to cook dry. Drain if necessary and set aside.
  • 2. Heat 2 Tbsp olive oil in a pan over medium heat. Sauté the zucchini with the garlic until tender. Add the baby Rosa tomatoes and cook until just softening. Set ¼ of the sautéed zucchini and tomatoes aside
  • 3. Mix the remainder of the zucchini and tomatoes with the barley, parsley, extra olive oil, lemon juice and zest, and season to taste.
  • 4. Put the barley mixture into a serving bowl, add the reserved zucchini and tomatoes to the top of the salad and enjoy!
