CINNAMON OAT PANCAKES WITH BERRY PUREE

Ingredients

  • 75 g rolled oats, ground in a grinder
  • 1 large egg
  • 125 ml low fat milk
  • 1 tsp cinnamon
  • 1 tsp xylitol
  • 1 tsp olive oil, for frying
  • Berry Pureé:
  • 175 g mixed berries (blackberries, raspberries and blueberries)

Instructions

  • 1. In a large bowl, add the ground oats, egg, milk, cinnamon and xylitol and whisk until well combined.
  • 2. Heat the olive oil in a frying pan over medium heat, then drop a in a large dollop of the mixture. Allow the pancake to cook on the underside for about 2 minutes before turning over for another minute. Remove the cooked pancake from the pan and set aside. Repeat until all the batter is cooked.
  • 3. Berry Pureé: Put the berries in a blender and blend until smooth.
  • 4. Plate the pancakes, pour over some berry pureé and serve.
