GOLDEN DELICIOUS APPLE GALETTE

Galette’s always seem to strike the balance between simplicity and being impressive. This beauty is such a quick and easy dessert that will never fail you! Original recipe from Food & Wine

Ingredients

  • Pastry:
  • 1½ C Cake flour (we used Eureka Mills Stone Ground)
  • 1½ tsp granulated sugar
  • ¼ tsp salt
  • 75g unsalted butter, cubed
  • ⅓ C ice water
  • Filling:
  • 4 Golden Delicious Apples
  • Juice of 1 lemon
  • 2 Tbsp castor sugar
  • ½ tsp ground cinnamon
  • 1½ Tbsp good quality honey
  • A pinch of ground ginger
  • 1 Tbsp unsalted butter, cubed

Instructions

  • 1. In a large mixing bowl, combine the flour with the sugar, salt and butter with your fingers till a bread-crumb consistency is reached.
  • 2. Slowly start adding the ice water over the flour mixture, mixing with your hands until all the moisture is incorporated and your dough has come together.
  • 3. Wrap in clingfilm and store in the fridge if you are making the dough the night before. Alternatively, pat down the dough into a round before rolling flat it with a rolling pin, it should be about 1.5cm thick.
  • 4. To make your filling, halve and core your apples before thinly slicing them down the length of the halve. Squeeze the juice of one lemon over the apples and set aside.
  • 5. In a small bowl, mix your sugar, cinnamon and ginger together.
  • 6. Take your rolled out pastry and, starting with a 3cm border, arrange your apple slices from the outside in, in a circular manner.
  • 7. Sprinkle the sugar mixture over the apples, drizzle with honey and dot with cubes of butter before folding the edges of the pastry over.
  • 8. Place your galette on a baking tray lined with baking paper and bake at 200°C for 60 minutes, checking regularly to avoid burning!
  • 9. Once done, remove from the oven and allow to cool a bit, either serve immediately or later (you can make these about half a day in advance) with freshly whipped cream or vanilla bean ice-cream.
