
JULIENNE CUCUMBER SALAD

Ingredients
- 1 medium cucumber, julienne
- 200 g cherry tomatoes, halved
- 1 handful fresh coriander, roughly chopped
- 4 Tbsp olive oil
- 80 g feta, crumbled
- 2 Tbsp freshly squeezed lemon juice freshly ground salt and pepper, to taste
Instructions
- 1. Julienne your cucumber, either with a sharp knife (mind those fingers!) or a julienne peeler (I have one - they're GREAT!). Avoid using the seeded part of the cucumber as it holds a lot of moisture and could make your salad soggy and no one wants a soggy salad.
- 2. In a large salad bowl, toss your cucumber, tomatoes, coriander and feta. Add the olive oil and lemon juice before giving it a gentle stir, finishing off with the salt and pepper.
