SLOW ROASTED TOMATOES

Ingredients

  • 500 g vine or Rosa tomatoes
  • 500 g shallots
  • 4 bulbs garlic, halved
  • olive oil
  • salt and freshly milled pepper, to taste

Instructions

  • 1. Preheat the oven to 120 °C.
  • 2. Place the tomatoes, shallots and garlic on a baking tray and generously drizzle with olive oil. Add salt and pepper. Place into the oven and slow-roast for 1 hour or until the garlic is soft and creamy.
  • 3. Transfer the tomatoes, shallots and garlic onto a platter and serve as a side dish or with fresh artisan bread.
