TURKISH DELIGHT ICE CREAM

Making your own ice cream is always a daunting task, but one that (almost) never disappoints. Your patience will be rewarded with this heavenly, creamy and sweet dessert. The perfect ending to a summer’s lunch.

Ingredients

  • 1 cup (250ml) full cream milk
  • 1 cup (250ml) fresh cream
  • 4 extra large egg yolks
  • ½ cup (125ml) castor sugar
  • 4 Tbsp (60ml) rosewater
  • Turkish delight, about 100g

Instructions

  • 1. Bring the milk and the cream to simmering point – do not boil.
  • 2. In a bowl, whisk the egg yolks and castor sugar until light.
  • 3. Whisk the warm milk and cream into the egg and sugar.
  • 4. Return to the saucepan (rinse it out first) and cook over a moderate heat, stirring constantly with a wooden spoon.
  • 5. The mixture will slowly thicken and is ready when it coats the back of the spoon. To test, drag your finger over the back of the spoon and the line should remain.
  • 6. Strain into a cold bowl and add the rosewater.
  • 7. Churn the mixture in an ice cream maker according to the manufacturer’s instructions.
  • 8. When the ice cream is ready, stir in the bits of Turkish Delight – use a pair of scissors to cut the gooey sweets.
  • 9. Place in the freezer until needed.
